Mackerel-Grapefruit Ceviche
8oz Mackerel Cubes
2 Pink Grapefruit Segments
Jalapeño Peppers
Grapefruit Juice
1 Lime Juice & Zest
1 Can of Lychees
Cilantro
4 Tbsp. Olive Oil
Dash Salt
Dash Cayenne
Soak fish cubes in grapefruit and lime juice for 2 hours in refrigerator to cure. Toss in all other ingredients, allow to sit for several hours, serve cold
